Unless you need it when you make a batch of infused brownies you normally don’t finish it in one day. Rather than risk them going bad, freezing your marijuana brownies allows you to extend the life of them without losing potency.
Cheri Sicard is a cannabis chef and the author of The Complete Idiot’s Guide to Easy Freezer Meals and The Cannabis Gourmet Cookbook. Sicard was a chef before her doctor recommended cannabis for her chronic condition and eventually intertwined the two areas of her life to become an infused chef.
Sicard talked to Greenway and said, “Many edibles can be frozen for longer storage along with marijuana butter and oil. But brownies are one of the easiest foods to freeze.”
Many people choose to freeze marijuana brownies in order to ration their medicine and not feel tempted to eat all of them. Sicard agreed and said, “freezing edibles makes good sense. You can portion control and save the rest for when you need it.” According to Sicard, even marijuana butter can be frozen in large quantities for later use. Freezing cannabis brownies and marijuana butter can extend their shelf life by about six months.
Sicard shared her favorite recipe for infused brownies using medicated coconut oil:
Ingredients
- 1/2 cup cannabis-infused coconut oil
- 1/8 cup coconut oil
- 4 1/2 ounces unsweetened chocolate
- 3/4 cup all-purpose flour
- 3/4 teaspoon salt
- 2 tablespoons cocoa powder
- 1 cup packed brown sugar
- 3 large eggs
- 1/2 teaspoon vanilla extract
Instructions
Preheat the oven to 350 degrees. Line an 8-inch square baking pan with aluminum foil and grease foil with either butter or vegetable shortening.

Melt the canna-coconut oil and the chocolate together over low heat, stirring frequently. Set aside to cool for 5 minutes.
Stir together the flour, salt and cocoa powder, set aside.
Stir the brown sugar into the melted chocolate mixture.
Beat in the eggs and vanilla continue mixing until well incorporated.
Mix in the flour and salt until just incorporated.
Pour into prepared pan and bake for about 25 to 30 minutes or until a toothpick inserted in the center comes out with just a few moist crumbs clinging to it.
Let cool in pan before using the foil to lift out the brownies and slice.
In order to effectively freeze marijuana brownies, letting them cool throughout is the key. “The goal is always to prevent freezer burn,” said Sicard, “so foods must be COMPLETELY cooled (chilled in the fridge is even better) before freezing. Also, wrap it well. So for brownies, I would wrap each portion, then put them all in a plastic freezer bag and into the freezer.”
When it comes time to eat them, Sicard said you can gently reheat them but bringing them to room temperature is the best way to enjoy your post-freezer treat.
Sicard made sure to tell us to keep the individual needs of the person in mind.
“For marijuana brownies, dosing is crucial and should be customized to the needs of the person consuming them.” Sicard offers a free mini-course on dosing for medical marijuana patients, medical marijuana caregivers, and adult recreational marijuana users. The course dives into calculating dosage and determining how much cannabis a person needs, as well as a dosing worksheet and list of resources.
