  • 1 cup half and half (or heavy cream)
  • 2 tablespoons medicated butter

  • 2 tablespoons fresh parsley, chopped
  • Cooked pasta, rice, or steamed vegetables, for serving

Instructions:

1. Heat a large skillet over medium-high heat. Melt the butter and add minced garlic, frying until fragrant, about one minute.

2. Add the chicken pieces to the skillet and cook for about 6-8 minutes, until they are cooked through and no longer pink in the center. Transfer the cooked chicken to a plate and set aside.

3. In the same skillet with the remaining butter, fry the chopped onion until translucent and fragrant.

4. If using, pour in the white wine and allow it to reduce by half while scraping any browned bits from the bottom of the pan.

5. Add the chopped sun-dried tomatoes to the skillet and fry for 1-2 minutes to release their flavors.

6. Reduce the heat to low-medium and add the half and half and your medicated butter to the skillet. Bring the mixture to a gentle simmer, stirring occasionally.

7. Season the sauce with salt and pepper according to your taste.

8. Add the fresh spinach leaves to the sauce and allow them to wilt, then stir in the grated Parmesan cheese until melted and well incorporated.

9. For a thicker sauce, you can optionally add a mixture of milk and cornstarch to the center of the pan, stirring quickly until the sauce thickens.

10. Return the cooked chicken to the skillet, sprinkle with fresh herbs and parsley, and stir to combine.
